Work days and hours are Tuesday through Friday 6AM-3PM and Saturday 11AM - 8PM; off Sunday and Monday. Occasional weekends. Work days and hours may vary based on the needs of the Unit and the Division of Housing and Food Service (DHFS). Candidate selected must provide verification of education and/or experience.
Responsible for planning, overseeing and execution of daily food production in Cypress Bend Cafe.
Leads and assists in preparation of food items for breakfast, lunch and dinner: including slicing, proper knife skills, cooking, display and grill cooking, deli, pizza and salad prep. Responsible for supervision and cash handling. Leads and assists in cleaning the whole kitchen area, kitchen equipment, refrigerators, freezers, and storage area. Maintain proper food storage. Oversees food display and garnish on all serving lines. Properly utilizes, stores, and labels cooked food and food items following proper Hazard Analysis and Critical Control Points (HACCP) and DHFS guidelines. Assists in creating recipes and menus. Advises supervisor of kitchen equipment repair or replacement. Checks computer printout for menu amounts and recipes. Reports any discrepancies to supervisor. Submits food usage report to supervisor. Meets with basement staff weekly to coordinate production and transportation of all commissary items.
Works as a team member in a diverse environment, encourages and promotes diversity. Other related functions as assigned.
One year of experience as a cook and preparing food in a large retail facility. One year experience food handling. One year experience following basic work instructions. One year experience in supervisory capacity. Equivalent combination of relevant education and experience may be substituted as appropriate.
High school graduation or GED. A culinary degree. Over 2 years of experience as a lead cook in a commercial cooking establishment. Over 2 years of experience working with computerized recipes. Over 2 years of experience operating volume cooking equipment. Demonstrated excellent interpersonal communication skills. Professional demeanor. Demonstrated ability to receive, respond, and follow through with written and oral University and Housing and Food Service policies, procedures and work related instructions from supervisors, customers, and co-workers. Must have and maintain a current Serv Safe Certificate or a current Travis County Food Handlers Card.
