General Notes

Work schedule is Sunday 5am to 2pm and Monday thru Thursday 4am to 1pm; Off Friday and Saturday. Work days, hours and area may vary based upon the needs of Unit and the Division of Housing and Food Service. Candidate selected must provide verification of education and/or experience. Must be able to stand for extended periods of time approximately 8 hours a day.

Responsible for assisting the Executive Sous Chef and Sous Chef in the planning and execution of daily Bakery production in Food Service. Assist in training of staff.

Essential Functions

1. Assists supervisor in preparation of all types of food items for lunch and dinner including mixing all types of bread and pastry dough; fabricate and baking all types of breads and pastries, mixing and baking cakes, mixing and preparing frostings, icings and glazes; frosting and icing cakes; slicing cakes. 2. Assists supervisor with hands-on production, presentation, service, food and physical safety. Ensure timely delivery of quality products in a safe manner. 3. Assists supervisor with Preparing product transfers and requisitions for bakery location and complete daily production records, waste sheets and temperature logs. 4. Assists supervisor in cleaning all bakery areas and maintain all hot and cold storage areas in a safe and organized condition. 5. Remove food from production line; assist in food storage including covering and dating; pull inventory as needed. 6. Effectively communicate with bakery staff, supervisory staff and delivery locations. 7. Maintain current knowledge of all areas of responsibility. 8. Check computer printouts for menu amounts and recipes; review menu and purchase requirements.

Required qualifications

One year of experience as a baker in a large commercial or institutional facility. One year experience as a baker in institutional baking. One year experience using baking equipment. Experience following basic work instructions. Equivalent combination of relevant education and experience may be substituted as appropriate.

Preferred Qualifications

More than one year of experience baking and using baking equipment. Culinary School Certification. Experience working in a large volume bakery, working with computerized food management systems. Demonstrated ability to receive, respond, and follow through with verbal work-related instructions and requests from supervisors, customers, and co-workers. Able to work with little or no oversight. More than one year experience in icing and decorating a wide variety of desserts in a high volume fast paced bakery. Experience in guiding and Directing part-time staff while working in a team environment. Demonstrated excellent interpersonal communication skills. Have and maintain a current Serv Safe Certificate or a current Travis County Food Handlers Card.
